I like to think that my great-great-great-great-grandfather Bartolome Romero, was enjoying the first of many bowls of New Mexico red chile con carne on a cool fall evening in the year of 1609, North of Santa Fe, in the Mora Valley of New Mexico. My love for chile has 400-year-old roots that are deep part of my New Mexico heritage. This book is a short account of chile history, great chile debates and the red chile recipe I learned from my mother.
